Ending the Game After The Ending

So instead of choosing retire party at the viper temple I chose to finish some quests. Now I'd like to end it, but I don't know how!

Also, I can't seem to find Volo! After the viper temple he said he was going to the keep but he's not where he normally is in the merchant quarters.

Isn't there an option to retire in the player menu?

yes,

anytime while not on the "open world" map. (in a town/city/location) click on the "open eye" icon in the bottom left corner. the bottom option in the list that opens should be "retire".

this option should exist anytime from shortly after starting the game to after completing the "final dungeon".
