I know that this is going to be a really noobish question, but I can't seem to figure this one out. First off let me start off by saying that I have not played the expansions to NWN1 and this is the first time that I have encountered the Prestige Classes. Now for my question.
How do I gain the Prstige Classes? I mean is there a quest that I need to do in order to do them, or do I just need to meet the minimum requirements for the class and just choose to level up in that class when I level? I really haven't looked when I leveled any due to the fact that I am playing a straight Monk. But I am wanting to start another character, probably making a Pale Master, or a Red Dragon Disciple.
Any help in the matter would be greatly appreciated.

if you read their descriptions you shall see specific requirements for each class...
meet the requirements and then u can select it when u level up next time

i've completed the requirements of
any non good
able to cast level 3 spells
but i cant change yet... i'm a lvl 12 warlock on early act 2
do i need to be at a certain part of the game??
Warlock invocations don't coun't as arcane spells, so you don't meet the requirements.
From the manual:
Warlock abilities do not combine well with other classes, so it is rare for warlocks to learn a prestige class (or multiclass). A warlock’s eldritch abilities don’t qualify them for prestige classes that require spellcasting abilities (such as the arcane trickster).

Along the same lines as this, i'm having problems becoming an arcane archer, tried twiced now, once as a ranger, levelled up to bout lvl11 but still woul'nt let me change over, thought it might be a bug in that the pointblank shot feat specifies its ranger and you can still select the original feat in the list when levelling up. So re-tried as fighter going ranged, lvl 6 fighter lvl 1 sorcerer, half elf each time by the way, and i still cant select the arcane archer prestige class. Anyone got any advice?
Think well about starting a prestige class. If you read it all well you will notice that actually there are more advantages to stick to your own class in stead of multiclassing to a prestige class. I guess when the add on will come you will have a possibility to reach a higher level then 20 so that you can level up to any class you prefer but now I would suggest to stay what you are. Especially if you are planning to become a pale master or a Red Dragon Disciple!

Chosing the Arcane Archer prestige class is hard, and not worth it imo.
I had the same problem, but the thing is:
First, you got to be a Elf/half elf.
Secondly, you must have the ability to cast arcanespells, which basically mean that you have to multiclass a wizard or a sorcerer.
And you must have enough Intelligent(if wizard) or Charisma(if sorcerer) to be able to cast a lvl1 arcane spell.
Only then will you be able to chose the prestige class.
I don't recommend it though, there is basically no upside with it.
At level 10 Arcane Archer you can use death arrow once/day.

I became an eldritch knight and there was not only no advantage that I have seen but I am now at a disadvantage to finish the game, it feels. (having lots of trouble in the end game cause my character is not a strong enough fighter or wizard or nine)

welcome to Hybrid land, where everything is half assed !
now seriously, thats what everyone should take into account before going for hybrid PrCs or multiclassing, you will never be good on any of the two realms, let it be an arcane and divine caster char, or a melee and arcane caster char (sorc / RDD).... generally those types of builds should be reserved for either experienced users or epic campaigns.....
I couldnt agree more. It is nice to level up in another class when you cannot level up anymore in the one you are in at the moment. If you would be able to level up to lvl 30 for example then multiclassing would be perfect!
